Autumn Salad with Maple Bourbon Vinaigrette

Time: 10 minutes; Yields 2 servings

A tasty and quick way to get some greens. A mix of baby kale and green leaf lettuce topped off with cheese, pecans, figs and a tasty homemade maple bourbon vinaigrette.

INGREDIENTS FOR THE SALAD

  • 3 oz baby kale
  • Half head green leaf lettuce, chopped
  • 1/4 cup figs, quartered
  • 2 Tbsp. crumbled feta cheese
  • 2 Tbsp. candied pecan pieces
  • bacon, crumbled (optional)

INGREDIENTS FOR THE VINAIGRETTE

  • 1 Tbsp. bourbon
  • 1/2 Tbsp. apple cider vinegar
  • 1/2 tsp. Dijon mustard
  • 1 Tbsp. maple syrup
  • 1/4 tsp. sugar
  • 1/8 tsp. salt
  • 1/4 tsp. pepper
  • 1/3 cup canola oil

Assemble salad greens into two bowls and top with figs, cheese, pecans and bacon (optional). To make the vinaigrette, combine bourbon, apple cider vinegar, Dijon mustard, maple syrup, sugar, salt and pepper in a medium bowl. Whisk together until combined. Then slowly add canola oil and whisk until well incorporated. Pour over top the salad to your preference.
