Fresh Cherry Crisp for Two

Time: 45 minutes; Yields: 2 servings

A summertime treat that features fresh bing cherries and sweet oat topping!

INGREDIENTS

  • 1 1/4 cup fresh bing cherries, pitted
  • 1 1/2 Tbsp. sugar
  • 1/2 Tbsp. cornstarch
  • 3/4 tsp. lemon juice
  • 1/8 tsp. vanilla extract
  • 1/4 cup rolled oats
  • 1 1/2 Tbsp. all-purpose flour
  • 1 1/2 Tbsp. whole wheat flour
  • 2 Tbsp. dark brown sugar
  • 1/4 tsp. cinnamon
  • dash of salt
  • 2 Tbsp. melted butter

Heat oven to 375. Spray two ramekins with non-stick spray and set aside.

In a small bowl, add the cherries, sugar, cornstarch, lemon juice and vanilla extract. Gently stir and pour equal amounts into the prepared ramekins.

In a small bowl, add the oats, flours, brown sugar, cinnamon and salt. Mix together. Add the melted butter and mix again. Evenly distribute the oat topping over the cherries mixture.

Bake for 20 minutes. Let cool for 10 minutes and enjoy!
