Icelandic-Inspired Apple Cake
Time: 1 hour; Yields: 6 servings
An Icelandic style cake topped with fresh apples, cinnamon and sugar.
INGREDIENTS
- 4 tart apples (like Pink Lady or Granny Smith), peeled, cored and thinly sliced
- 1/2 cup white sugar
- 2 tsp. cinnamon
- 1 1/3 cups all-purpose flour like King Arthur Unbleached All-Purpose Flour
- 1/2 cup white sugar
- 1 1/2 tsp. baking powder
- 1/2 tsp. salt
- 2/3 cup warm milk
- 1 large egg (can use egg replacer)
- 6 Tbsp. melted butter
- 1 tsp. vanilla extract
Heat oven to 350° F and butter a 9-inch square cake pan. Set aside.
In a medium bowl, combine apple slices, sugar and cinnamon. Mix until sugar and cinnamon evenly coats the apple slices and set aside.
In a large bowl, add flour, white sugar, baking powder and salt. Set aside.
In a medium bowl, mix together the warm milk, egg, melted butter and vanilla extract. Add the wet ingredients to the flour mixture and stir to combine.

In a stand mixer, add butter and sugar. Cream until light and fluffy. Add eggs, one at a time, mixing after each addition. Add cream and vanilla. Mix until well combined.
Spoon the flour mixture into the wet ingredients and mix until just combined, being careful not overmix.
In a small bowl, combine brown sugar and cinnamon. Pour batter into the prepped baking pan. Top with sliced apples and brown sugar/cinnamon mixture.
Bake for 45-50 minutes. Do a toothpick test and let cool.
