Poblano Grilled Cheese
Time: 45 minutes; Makes 4 sandwiches
- 2 poblanos, cut in half and deseeded
- 8 slices of good sandwich bread
- 8 slices of cheddar cheese (or your favorite!)
- 1/2 tbsp. butter
Roast the poblanos by placing them in the broiler on high for 6-7 minutes, checking periodically. Poblanos are done when the pepper’s skin is blackened. Place the roasted poblanos in a plastic bag and seal, which will help to loosen the skins, for about 20 minutes.
Once the poblanos have cooled to the touch, peel off the skins. Dice your poblanos so they’re ready to be placed on the sandwich bread.
When the poblanos are almost done cooling, heat your griddle on medium. Place a small amount of butter on the heated griddle.
Top the sandwich bread with two slices of cheese and your preferred amount of diced poblano. Heat the sandwich on the griddle for four minutes on each side, until golden brown and the cheese is melted.
