Spicy Skillet Potatoes
Time: 45 minutes; Yields; 2 servings
Cayenne pepper, honey and butter sizzle together to spice up potatoes in a tasty side dish.
INGREDIENTS
- 2 Tbsp. vegetable oil
- 2 Tbsp. unsalted butter
- 2 Russet potatoes, ends cut off and sliced 3/4-inch slices
- salt and pepper, as desired
- 1 tsp. honey
- 1/2 tsp. cayenne pepper
- 1/2 cup chicken broth
- 2 cloves garlic, minced
Heat oven to 475. Place 10-inch cast iron skillet on the stove. Melt butter and heat oil over medium high heat. Add the sliced potatoes to the skillet in one layer and season with salt and pepper. Cook for 5 minutes until the bottom begins to brown. While cooking, mix together honey and cayenne pepper.
Remove from heat and flip each potato. Add honey-cayenne pepper mixture over top the potatoes. Place skillet in the oven for 15 minutes.
Remove skillet from oven and flip potatoes again. Add chicken broth and garlic to the skillet. Place skillet back in the oven for 15 minutes.
Remove from oven and add additional salt and/or pepper, if desired.
