No-Bake Sunbutter Coconut Energy Balls

Oats, sunbutter, flax seed, coconut flakes and chocolate chips come together for tasty energy bites!

INGREDIENTS

  • 1 cup quick oats
  • 1 cup unsweetened coconut flakes
  • 1/2 cup sunflower butter
  • 1/2 cup ground flaxseed
  • 1/2 cup mini chocolate chips
  • 1/4 cup honey
  • 1 tsp. vanilla

In a standing mixer, add all the ingredients. Beat on low until well mixed. Roll mixture into balls. Depending on your preference, you can do smaller bite-size amounts or make each ball larger. Store in an air-tight container in the refrigerator for 3 days.
